        Changes at or above this percentage are flagged as material on invoice review.
        The "Prev Price/kg" column on the ingredients list compares the current price against the most recent price recorded before this window. Falls back to the last recorded price if no history is old enough.

        Dish Costing

        Added to raw ingredient cost to account for cooking loss, waste, and portioning variance. Applied when calculating Dish Cost from a recipe.

        Email Integration (IMAP)

        Connect an inbox so invoices arriving as PDF attachments are automatically fetched, processed, and queued for your review. Use an app password (not your main account password) — available in Gmail and Outlook security settings.
